I think I want to bake something for the Party on Saturday. Think-tank minions are requested to suggest types of cakes. Or cookies. Or something. Probably cake because it is slightly more challenging and thus fun.

with mint frosting....interesting. I've yet to like mint frosting, mind you. They're always cloyingly sweet and candy-cane peppermint.

Airy sounds good in the heat though.

Reminds me, I wanted to ask. Best way you've found to get coffee flavor in baked goods. Somehow, just tossing coffee in doesn't seem a good plan. No matter how finely it's ground, it seems like it would be gritty and create bitter spots.

Freeze-dry espresso powder is your standard option for coffee-in-stuff.

Alas, I've never gotten into lemon-poppyseed together. Good apricots are awesome. Our last bag from Pedrick Produce (Dixon) was *great*.

Have you tried "Black Velvet Apricots" ? They're a plum/apricot hybrid, apricot shape, with plum flavor insides and a non-bitter skin.

This is true. I think whipped cream would fairly well melt in the heat, though there may be ways around that problem.
